Other than Ramen: Easter Egg Sandwiches

Remember when we were kids and it was part of the tradition to dye Easter eggs with family? My cousins and I would go all out with stickers, glitter and tie-dye in competition for the prettiest egg.

It was always a sad moment when the beautiful, hand crafted shells of the hard boiled eggs would be broken in order to make deviled eggs or egg salad. From the devastating crack sound of the shell, it was downhill.

Thankfully, although the special artwork was destroyed, the hard boiled eggs made for a delicious snack!

In honor of the Easter celebrations taking place today, try out this recipe for an easy Egg Salad Sandwich made with five ingredients in about five minutes.

If you do not want to hard boil the eggs on your own, you can pick up a package of already boiled eggs for you at the grocery store. Spread the salad in between bread, on a croissant, or even a toasted English muffin and you’re good to go!

For an inexpensive price, you will have a meal full of protein from the eggs, which will keep you full until your next meal.

Ingredients

6 hard-boiled eggs

3 tablespoons mayonnaise

1 tablespoon mustard

1 tablespoon relish

A dash of salt and pepper

6 slices bread

Optional: Add in diced celery to salad mixture, or lettuce & tomato on the sandwich.

Directions

1.     Finely chop boiled eggs.

2.     Mix in mayo ine tablespoon at a time, so not to add too much.

3.     Mix in mustard, relish and salt/pepper.

4.     Put egg salad mixture on bread, top sandwich with lettuce and tomato.

5.     Enjoy!
