I don’t know about you, but lately I’ve started to realize how much amazing food can be made in a microwave. Thanks to this wonderful invention, we can now enjoy a classic meal like the tuna melt anywhere, even in a dorm room. Here is my re-vamped quesadilla version of the beloved warm, gooey Tuna Melt.

Ingredients Packaged or Canned Tuna Mayo Tortilla Shredded Cheese Salt and Pepper Optional: Tomato, Relish, Celery, Onions, and Dijon Mustard.

Directions Empty tuna into small bowl. Add in a tablespoon or so of Mayo, to your liking. (Some people also like to add in a little relish, diced celery and/or onions, and a dollop of Dijon mustard for some spice–your choice though.)

Sprinkle a dash of salt and pepper. Stir everything together.

Spread tuna mixture on half of the tortilla. Lay a few slices of tomato if you like. Top with shredded cheese. Fold other half of tortilla over.

Microwave for 1-2 minutes or until cheese is melted. Cut like into pieces and enjoy!
